Roasted Peppers– are a wonderful way to enjoy peppers. Roasting gives them a unique flavor that makes them absolutely delish served on some Italian bread. This recipe works perfectly as an appetizer, a side dish, a snack, or a main meal.

What Peppers Work Best for Roasted Peppers:

My favorite peppers to use for this recipe are red, yellow, and orange peppers. The sweetness of these peppers work perfectly to create this dish. Green peppers do not work for this recipe as they have a different flavor profile that doesn’t lend itself to sweetness.

How do I Char the Peppers:

The easiest way to char the peppers is to put them on the grill at medium heat and turn them to char each side of the pepper.

Why do I need to cover and seal the Peppers once Roasted:

This recipe requires a bowl that you can place a tight-fitting lid on. Once the peppers are char’ed and come off the grill, they need to immediately be placed in the bowl and covered. The steam is the secret to getting the skin to peel off easily and cleanly.

Can I use Dried Oregano Instead for Roasted Peppers:

Yes! If the supermarket does not have fresh oregano, you can absolutely substitute it with dried oregano. The recipe will still work perfectly.

Can I use Jarred Garlic for Roasted Peppers:

No! Jarred garlic will not work for this recipe. Fresh garlic cloves must be used. The garlic will not be eaten in this recipe. It is there to lend its flavor only. The garlic cloves will be pulled out before serving.

Storing your Roasted Peppers:

If there are leftovers simply place them in an air tight container and place it in the refrigerator for up to 3 to 4 days. Remove the refrigerator and let them come to room temp before serving again.

Ingredients for Roasted Peppers:

This is everything you will need to make Roasted Peppers. 6 peppers of varying colors of red/orange/and yellow, fresh oregano, garlic, salt, pepper, red crushed pepper, olive oil. Optionally you can also add Black Truffle Oil for a whole new experience!

How to Make Roasted Peppers:

  1. Place your peppers on the grill and char them on all sides.
  2. Place them immediately into a bowl with a tight fitting lid to steam.
  3. About an hour later, peal the skin away from each pepper.
  4. Slice open each pepper and remove the seeds with your knife.
  5. Once the pepper is clean, slice it into strips and place in a bowl.
  6. Add 2 whole cloves of garlic sliced in half, chopped oregano, salt, pepper, red crushed pepper, olive oil, and black truffle oil.
  7. Stir your peppers together and let marinate for at least 1 hr.
  8. Before serving, remove the garlic cloves from the bowl

Ingredients
  

  • 6 peppers (red, yellow, and orange)
  • 2 garlic cloves
  • ¼ cup extra virgin olive oil
  • 1 tablespoon fresh oregano (finely chopped)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • pinch of red crushed pepper
  • Optional: splash of black truffle oil

Instructions
 

  • Turning on the grill to a medium flame, place peppers on the grill and roast until all sides of the peppers are char'ed. Turning as needed.
  • Once all sides of the pepper is char'ed, immediately place them into a bowl with a tight sealing lid.
  • Leave peppers to steam in bowl with lid on for at least 2 hours.
  • Peel and remove the char'ed skin from each of the peppers.
  • Once peeled, slice into the pepper to open it up like a book. Using your knife edge, scrape the inside of the pepper to remove the seeds. When the inside of the pepper is clean, slice it into quarter inch strips and place into a bowl.
  • Then add extra virgin olive oil. Optionally, you can also add a splash of black truffle oil. That is how I make mine.
  • Then add the finely chopped fresh oregano.
  • Then, add 2 peeled garlic cloves, sliced in half. (You will not eat the garlic. It is there only to add flavor.)
  • Add salt and pepper and toss everything together. Taste a pepper to see if it needs more salt. Add to taste if needed.
  • Let marinate for at least 1 hr at room temp.
  • Before serving, remove the garlic cloves.
