In a mixing bowl, combine flour, baking powder, salt, cinnamon, and nutmeg and whisk together.
In a separate bowl, add butter, light brown sugar, granulated sugar and cream together.
Add eggs, one at a time, beating between each to the butter and sugar mix
Then add vanilla and apple cider and beat until combined.
Using the dry ingredients, add a little bit at a time, and beat until combined. Don't over-mix. Just until it all comes together and the dry ingredients are incorporated.
If you would like some fresh apple pieces in your muffins, add them now to the batter and mix in.
Line a muffin pan with muffin paper cups
Fill each muffin paper cup half way with batter
Bake at 350F for about 20/25 minutes or until wooden toothpick comes out clean. Since each oven bakes differently, the toothpick will be your key guide to when the muffins are perfectly ready.
(Optional) Prepare a bowl with 1/2 cup granulated sugar and 1 tablespoon cinnamon, to sprinkle on the top of the muffin after they come out of the oven.
Let muffins cool for about 20 minutes before removing from pans to enjoy!
